There are so many delicious possibilities when cooking with insect powder. Because of its nutty flavour, it fits perfectly with both sweet and savoury dishes.
This recipe for banana bread is both sweet and moist, and also quite healthy! We have added bug powder to give a higher level of protein, sweetened it with dates for a natural sweetness and added both whole wheat flour and oats for more fiber and fullness. Enjoy with a good cup of tea or coffee, some nice company and a lot of ‘hygge’.
BANANA BREAD WITH INSECT POWDER
FOR 1 LOAF OF BREAD YOU WILL NEED
3 ripe bananas
50 grams of softened butter
10 dates (without stones)
100 grams plain flour
50 grams whole wheat flour (can be replaced with regular flour)
50 grams of oats
3 tablespoons of insect powder (get it here)
1 pinch of salt
1 teaspoon of baking soda
1 teaspoon of vanilla powder
50 - 100 grams of chopped nuts and fruit, we used pecan nuts and dried berries
Turn on the oven at 180 degrees celsius.
Mash the bananas into a rough paste with a fork. Chop the dates thoroughly with a knife or in a small blender. Mix together and add eggs, butter and vanilla extract.
In a separate bowl mix flour, oats, salt, baking soda. Combine with the wet ingredients and add the chopped nuts and fruit.
Transfer the dough into an oiled form. Bake for 30-40 minutes until baked through. Let it cool before cutting and serving.
