Keto Cold Sesame Noodles are a super easy and delicious recipe great for meal prep or a quick on the go salad.
This version is made with hearts of palm noodles to bring down the calories and carbs compared to traditional asian noodle recipes.

Why this hearts of palm noodle recipe is the best
If you are trying to eat less carbs and calories but still want to enjoy restaurant quality dishes than you have to make these chilled sesame noodles using hearts of palm noodles.
On their own hearts of palm can be bland and not very appealing but this peanut sauce transforms the hearts of palm into a delicious healthy meal you will crave all the time.
Its my favorite recipe to clean out the vegetable drawer when I have a bunch of veggies to use up and its so easy to make a big batch for meal prepping.
Ingredients to Make Cold Sesame Noodles
Hearts of Palm: if you haven’t tried hearts of palm they can be a little intimidating but they just need to be rinsed well and paired with a tasty sauce. You can also use “zucchini noodles or Skinny Pasta as a low carb substitute.
Other Veggies: I like to load this recipe up with whatever veggies are sitting in the fridge. I probably never make this dish the same way twice because I’m always using what I have on hand. Use a Japanese mandolin (carefully) and julienne all the veggies up and toss them in. my favorites are, Carrots, peppers, onion, and cucumber but get creative.
Peanut Sauce: There are 4 main ingredients for this sauce, Peanut butter, Gluten Free Soy Sauce, Sesame Oil and Sambal Oelek. After that you can swap or omit the other ingredients if you don’t have them on hand. Rice vinegar and lime adds the zip. Fish sauce has a briny flavor used in tons of southeast asian recipes and ginger and garlic are the common flavor profile add ons to round out the dish.
Protein: These cold sesame noodles go great with just about any protein you can think of. I personally love shrimp or any other seafood. Chicken, steak, tofu or even grilled portobello mushrooms would be great as well. And don’t forget a few soft boiled eggs (my method for that is below)
Directions for 7 minute soft boiled Eggs
- Bring a pot of water to a rolling boil.
- Lower eggs into the pot. Make sure they are fully submerged.
- Boil for exactly 7 minutes
- Remove eggs immediately and shock in ice water.
- Allow eggs to fully cool in fridge for at least 30 minutes
- Gently peel eggs will keep for up to 5 day refrigerated.
- *Use good quality eggs for best results.
How to Make Cold Sesame Noodles
- Rinse the hearts of palm noodles under room temp water then drain and pat dry. Julienne all of your other veggies and add to the bowl with the hearts of palm
- Prepare the dressing by adding all of the ingredients listed into a blender or food processor and blend until smooth. Store the dressing in a squeeze bottle or sealed container until time to prepare the salad.
- To assemble toss the veggies in a large bowl with the peanut dressing until well coated. serve with protein of choice. and soft boiled egg
Tips and Variations
- Make this ahead. As good as cold sesame noodles are they are even better the next few days once the sauce has really absorbed into the veggies.
- Keep the chilled sesame noodle sprat from the protein. I prep multiple proteins during the week so I can have a variety. Sometimes I want steak and the next morning I might be in the mood for shrimp.
- Make the sauce ahead and store in the fridge for up to 6 weeks. you can use this sauce as a salad dressing or dipping sauce so I always have it ready.
- If you don’t have hearts of palm use finely shredded cabbage and make an asian slaw.

Ingredients
- 2 cans Palmini Linguine Noodles
- ½ cup Carrot Julienne
- ½ cup Seedless Cucumber Julienne
- ½ cup Red Onions Thin sliced
- ¼ cup Sliced Scallions
- 1 Sliced Jalapeno
Peanut Dressing
- ¼ cup Peanut Butter
- ¼ cup Tamari Gluten Free Soy Sauce
- 2 tbsp Sesame Oil
- 2 tbsp Rice Vinegar
- 2 tbsp Fresh Lime Juice
- 2 tbsp Sambal Oelek
- 2 tbsp Minced Garlic
- 1 tbsp Minced Ginger
- 1 tsp Fish Sauce
Garnishes
- ¼ cup Chopped Peanuts
- 1 tbsp Sesame Seeds
Instructions
- Julienne carrot and cucumber, Slice scallions and jalapenos. Chop Peanuts and drain and rinse hearts of palm noodles.
- Make peanut sauce by combining Peanut Butter, Tamari, Rice Vinegar, Sesame Oil, Sambal Oelek, Lime Juice, Fish Sauce, Grated ginger and Garlic. Whisk until smooth. if sauce seems to thick ad a tbsp of water.
- toss Hearts of palm, Carrots, Cucumbers and half of the scallions together with peanut sauce then let chill in fridge for at least 30 minutes. Toss again before serving to re-coat the noodles. Garnish with remaining scallions, sliced jalapenos, chopped peanuts and sesame seeds
Notes
Serving size is about 1 cup with 2 tbsp of the peanut dressing.
Store the chilled sesame noodles in a sealed container for up to 5 days.
Dressing can be stored separately for up to 6 weeks
